Abstract
En el artículo, el antropólogo francés demuestra de manera convincente, a partir del ejemplo de las rutas gastronómicas en México, que la dinámica de “hacer patrimonio” es un “doble proceso” de arriba para abajo e inversamente, en el que se despliegan asimetrías de poder, procesos políticos, económicos y de dominación cultural en la selección de los elementos seleccionados por ser “patrimonializados”. Quisiera enfocar mis comentarios tanto en torno a lo que tienen en común y como a lo que tienen de distintivo los dos aspectos de este proceso dialéctico en torno al patrimonio.In all cases, authors will retain the moral rights established by law and they will yield the right of first publication of their article to the journal.
